My top 5 favorite recipes

I am one of the biggest foodies out there. I love cooking, trying new places to eat at and exploring new cultures/places mainly because of their food. I think about food all the time and I always say if you are going to pay for a meal might as well make it one thats local, yummy and worth every penny. Here are my top 5 favorite recipes to cook at home.

Celery/Apple Juice:
1 bunch of celery
1 granny smith green apple
Some people add a dash of lemon juice but since I have acid reflux I drink it just as is.

Smoothie:
1 frozen banana
5 frozen strawberries
1 tablespoon of almond butter
1/2 cup of almond milk
1 tablespoon of chia seeds
Veggie White Bean Chili

Ingredients
2 tablespoons olive oil
1/2 large white onion, diced
4 large carrot, cut into pieces
4 ribs celery, cut into 1/2-in. pieces
2 15.5-oz. cans cannellini beans, drained and rinsed
1 tablespoon ground cumin
1 teaspoon kosher salt
4 cups vegetable broth
1 cup chopped kale (about 2 oz.)
1/2 cup uncooked white quinoa, rinsed
1 tablespoon chopped fresh rosemary

Plantains, Puerto Rican Chicken and Rice
Get a pack of chicken thighs and unfold chicken so it lays flat on the cooking sheet. Pound chicken individually to make it more tender. Then rub with sazon goya seasoning. Put into the oven (375) for 25-30 minutes until fully cooked.
White Rice:
We get jasmine rice from Trader Joes and boil it until done. You can find instructions on the packet of rice.
Plantains:
Buy green plantains from the store. Take off skin and cut into small two inch pieces. Fry them slightly in a pan in this cut up shape first. Then use a tortilla press to pound it down into the plantain shape. We use a sandwich bag cut open to put it into so that it does not stick to the press. Make sure it is cooled down before you put it on the plastic bag. Once you have formed its shape put back into the pan of oil to fry. Make sure to rotate it once it is frying. Then take out of the pan and salt right away.

I put my avocado right on the plantains mashed then put the rice on it, then add black beans and then the chicken.

Non dairy cookies and cream:
2 cups almond milk
1/2 cup cashew butter or almond butter
1/3 cup of sugar
1/4 plus 1/8 tsp salt
1 1/2 tsp pure vanilla extract
1 tablespoon of cocoa since I wanted it more chocolatey to mask the non dairy flavor
Oreos and marsh-mellows thrown in after it was done mixing.

I mixed them all together then put it into my ice cream kitchen-aid attachment and mixed for 20 min. It was not super frozen so I put it into the freezer for 6 additional hours until frozen.

Rocky Road Ice cream:
2 cups heavy cream
1 cup whole milk
1 egg
1/2 cup sugar
1/4 cup cocoa powder
1/4 teaspoon vanilla extract
1/2 cup of mini marsh-mellows
1/2 cup of nuts
I spun it in my kitchen aid attachment for 15 minutes then put into the frezzer for 2 hours. This one froze much better!
